Default Pea sprouts and shoots

I'm interested in producing pea sprouts (like bean sprouts) and pea shoots (grown kind of like wheat grass) but don't have experience. Is there any way to know which varieties are best for those purposes?

I'm guessing that, if the peas are sweet, the sprouts will probably be as well. But is there any way (besides growing out and trying 70 different varieties) to know which pea varieties make the tastiest young leaves and shoots?

Has anyone tried peas this way? Will you share your experience?

Also, what's the scoop on spicy peas? I didn't know there was such a thing until I got the Yearbook. What do they taste like?
