I've been growing herbs as companion plants but not using them. I'd like suggestions on a book for not only growing but using them.

My current (modern) favorite is :
The Encyclopedia of Herbs: A Comprehensive Reference to Herbs of Flavor and Fragrance by Arthur O. Tucker and Thomas DeBaggio, Timber Press, 2009. This book has detailed and scientifically researched information about the active or aromatic compounds in commonly used herbs as well their GRAS status. This is, in no way, a recommendation of any of herb for medicinal use, but I, personally, have found the references provided in this work a great introduction to a safe and reasoned pharmacopoiea in accordance with rigorous standards. |
