  • How to store sweet potatoes in hot climate?

    I live in a climate where sweet potatoes are a challenge to grow but not too hard to store due to "natural refrigeration" over the winter.

    How are they traditionally stored in hot countries where they are traditionally a major staple? Let's assume that the climate is such (there is a significant dry season) that they can not be grown year-round, so that it's either storage or doing without for part of the year.

    I'm wondering if it's just "leave them in the ground and dig as needed".

    Much obliged for the insights of those who have experiences with such things such as I would never have had the opportunity to have.

      They need to cure in a warm humid spot for awhile, then store in cool,dark, dry area. 50-60 degrees.
